Preheat oven to 400˚F. Begin by placing a steamer insert into a saucepan and fill it with water, stopping just below the bottom of the steamer. Let the water boil. Add the cauliflower and cover it. Steam it for 20 minutes or until it is tender. Then move the cauliflower to a bowl and mash it.
Mix the cauliflower, sour cream, shredded cheese, chives, and garlic powder into a 9-inch baking dish. Top it with butter.
Bake in the oven for 40 minutes until it begins to bubble. Dress it with parsley and serve.
1 Whole Cauliflower
1/2 Cup of Shredded Sierra Gold Cheese
1/2 Cup of Sour Cream
3 - 4 Tbsps of Chives
2 Tbsps of Chopped Parsley
1/2 Tsp of Garlic Powder
1 or 2 Tbsps of Butter, Cut into Pieces
